As Executive Chef of Genting Palace at Resorts World Las Vegas, Chef Billy Cheng brings over 40 years of experience and passion to the exquisite Chinese fine-dining restaurant. He takes great pride in taking care of guests worldwide and strives to ensure that everyone can enjoy authentic Chinese dishes.
Cheng grew up in Guangdong, China where he was inspired by his father’s passion for cooking and seeing his family’s participation in the restaurant business. He eventually started his own BBQ business and began his culinary journey at a young age. The foundation of his expertise was laid during these formative years, establishing a commitment to authenticity and a deep understanding of Chinese cuisine.
Venturing beyond his roots, Cheng traveled worldwide and honed his skills in Hong Kong, Taiwan, Canada, and the United States. His path led him to Moongate at The Mirage in 1999, which marked the beginning of his career on the Las Vegas Strip. Cheng later became the Executive Chef at Shanghai Lilly in Mandalay Bay and earned the prestigious American Masters of Taste Gold Medal for his exceptional work. His endeavors also steered him to Beijing Noodle No. 9 in Caesars Palace and, most notably, Jasmine, an award-winning restaurant at Bellagio.
Cheng’s time as the Executive Chef at Bellagio’s Jasmine from 2011 to 2021 is a testament to his culinary prowess. In 2016, 2017, and 2020, he orchestrated the Chinese New Year Gala Dinner at Bellagio, an extravagant affair serving thousands of guests. His culinary artistry leaves an enduring impression, showcasing his exceptional talent and skills.
