LAS VEGAS, NV (Nov. 1, 2023) – Resorts World Las Vegas announced today the addition of Stubborn Seed, the acclaimed Michelin-starred restaurant helmed by Bravo’s “Top Chef” season 13 champion, Jeremy Ford, and award-winning restaurant group, Grove Bay Hospitality Group, coming to the resort in Summer 2024. A stellar beverage program with innovative cocktails will round out the dining experience.
“We are dedicated to bringing the best culinary experiences to our guests at Resorts World Las Vegas and are thrilled for the opportunity to welcome Chef Ford and his highly acclaimed restaurant to the property,” said Peter LaVoie, President of Resorts World Las Vegas. “Stubborn Seed holds a reputation for impeccable dining and we cannot wait to introduce its Michelin-starred cuisine to the Las Vegas market.”
Stubborn Seed has earned one Michelin star two years in a row, ever since the Michelin Guide launched its inaugural awards in Florida in 2022. The flagship location was created six years ago by Chef Jeremy Ford and local Miami hospitality players, Francesco Balli and Ignacio Garcia-Menocal, the co-founders and CEOs behind Grove Bay Hospitality Group, which also owns and operates other celebrated restaurants in Miami. Stubborn Seed at Resorts World Las Vegas marks the team’s first foray out of the South Florida market.
“We are immensely proud of the reception both the public and critics has given Stubborn Seed since its inception in 2017,” said Ignacio Garcia-Menocal. “Las Vegas is a dynamic city and the Resorts World property is an iconic resort on the Strip, adds Francesco Balli. We are excited to bring Chef Ford’s culinary creations to the city that never sleeps.”
Located within The District just off of Conrad’s main porte cochere, this culinary hotspot promises a memorable setting for any occasion.
“I’m very excited to bring Stubborn Seed and its tasting menu concept to Las Vegas,” says Jeremy Ford. “I have so much respect for the local produce, culture and all the amazing chefs around the area and I can’t wait to start creating memorable dishes at our new restaurant.”
Stubborn Seed at Resorts World Las Vegas will offer guests an exceptional dining experience, showcasing Chef Ford’s culinary mastery and dedication to delivering elevated flavors and artful presentations. The restaurant’s launch in 2024, in tandem with the hotel’s three-year anniversary, will undoubtedly generate excitement among food enthusiasts and critics alike.
